Vegetable Ditalini Soup: Small Shapes, a Colourful Table

Vegetable soup prepared with short, hollow ditalini pasta, carrots, courgettes and tomatoes.

With its small, short and hollow shape, ditalini gives vegetable soups a distinctive texture. Combined with carrot, courgette and tomato, it creates a colourful bowl with a variety of ingredients in every spoonful. This recipe idea is a lovely starting point for using seasonal vegetables you have on hand and adding variety to the table.

Cut the carrot and courgette into small, similarly sized pieces. Gently sauté the vegetables that take longer to soften in olive oil, then add the tomato and hot water or vegetable stock. Add the ditalini when the vegetables are nearly tender. Check the pack for the pasta cooking time and cook it together with the vegetables.

Adjust the consistency with the understanding that the pasta may absorb more liquid as it stands. Add fresh parsley and black pepper to taste before serving. Served with a slice of bread, Nur Makarna Ditalini reminds us how many different stories a small pasta shape can bring to the table.
